Study of hydrogen peroxide synthesis of probiotic Lactobacillus strains

Abstract

During the research work, the reproductive properties of eight probiotic Lactobacillus strains were determined, and their of their hydrogen peroxide production was monitores. The productivity of promising strains was increased by changing the environmental factors (choice of nutrient medium used for strain maintenance, optimisation of the temperature used in the aerobic phase, aeration, and carbohydrate supply). The strain L. crispatus LCR01 proved to be the best H2O2 producer regardless of the quality of the carbohydrate used in the production stage. Based on the ability to synthesize hydrogen peroxide, this was followed by L. helveticus R-52 and L. fermentum HA-179 strains. Among the substrates used, maltose proved to be the best carbohydrate source, and LAPTg was the culture medium. In terms of environmental parameters, the condition is 37 °C and shaken (250 min-1).
