Abstract

The raw materials are obtained from various production and breeding sources. An increasing number of processing technologies are used and the huge range of products available to consumers. The food security problems can be solved with reasonable doubt by the areas of regulatory compliance (enforcement), the introduction of modern quality management systems, product traceability, and product identification. The examinations were focus on meat (poultry meat, taking into account the production chains) occurring in IT systems to support quality-management of the development, in addition to the area currently used quality management systems and regulations, monitoring systems for the food. The future technologies which will be used for identification and information tools, and domestic meat business readiness assessment were studied too.
