Evaluation of the traceability in meat-processing plants

Abstract

Traceability is mandatory covering the entire food-chan, but due to the fact that the relevant laws do not introduce principles of building
the system, more operational types are used. The manual system (registered on paper), besides the low costs, represents a criterium
in the category of guaranteed quality. On the contrary, the electronic system is in the category of functional quality. So the evaluation
of the traceability systems should not be primarily based on food-science, but on marketing-researches.
