Absztrakt

Paste has been known and consumed in a number of forms for more than two thousand years. According to the guidelines of modern, healthy nutrition egg dough – which is a speciality of Hungary – production assumes appropriate raw materials, preparation technology and dietary usage. Egg paste has a place not only in healthy nutrition, but due to its favourable physiological effects also in medical and infant nutrition, as well as in sport diets. Its complex carbohydrate content has a key role in covering the daily energy intake and in ensuring physical and mental abilities. Due to its egg content it delivers full value proteins, vitamins, lecithin, iron and other important minerals, which all are required in maintaining normal physiological functions.
